If you know me then you will know I have a huge sweet tooth. Anything caramelised, layered in syrup, dipped in chocolate or sprinkled with sugar is on my 'yes, totally yes' ideal menu, and when it comes to breakfast if there is something sweet and enticing to be chosen, I will be most likely to indulge. So todays post is to share a little sweetness and something new, a recipe, for all of you on how to make the perfect, easy, minimal mess, minimal stress pancakes ready for the next time you want to treat yourself with the best breakfast ever! Its crazy how simple these are to make and knowing me when the toppings are at full range you can just pile them on top... what's better than that!? The recipe below serves about four at two to three medium pancakes each (depending on how large/small you make them this will obviously differ), plenty as these are fluffy and filling. Mel's minimal mess, minimal stress Pancakes | the Recipe
(Serves 4)
2 cups self raising flour
1/2 teaspoon baking soda
2 cups milk
2 eggs
1/4 cup sugar (optional)
Method
1. Sift self raising flour and baking soda into a mixing bowl, then add in the milk, eggs and sugar.
2. Whisk well until all is combined and batter is smooth and thick.
3. Heat a medium sized non-stick saucepan, pour batter to desired size and flip when bubbles form and burst on the raw surface.
4. Finally top with an abundance of sweet toppings! (pictured below is sliced banana, mixed berries and maple syrup... yes please:)
