Everyone loves a good healthy recipe, my go to recipe that is easy, filling and just plain good for anytime of the day, breakfast, lunch or dinner, just so happens to be an Omelette. Omelettes are so easy and simple to make and what I love about them is that each time you make one you can attack it with a whole new set of ingredients, from tomatoes and spinach, to onions and potato, to good ole 'whatever we had for last nights dinner' mixed in. Its a meal that is totally satisfying both hunger wise and creatively which is the best of both worlds for me! So I hope you enjoy this easy recipe, bear in mind you can create it as you wish, add whatever is in the fridge or nothing at all, the Omelette of your dreams is at your fingertips. This recipe below is my go-to combination and i'd say... it's an omelette and it's healthy.
It's an Omelette & it's Healthy | the Recipe
(Serves 4)
2 eggs
1 teaspoon of olive oil
1 pinch of salt
1 pinch of pepper
a dash of milk
& Your choice of toppings: e.g....
a handful of roughly chopped spinach / salad leaves
1/2 a tomato diced
a small heaping of grated cheese
1 tablespoon of hummus
Method
1. Beat the two eggs, salt, pepper and milk into a bowl until well combined.
2. Add the tomato and lightly stir into the mixture.
3. Heat a medium sized non-stick saucepan adding the oil, then when warm pouring the egg mixture and incorporating the chopped leaves to sit over the top.
4. Let the omelette cook for 5 minutes before flipping over, or if needed folding in half.
5. Leave until all the egg is cooked through (ensure this otherwise you'll get runny egg :( ) and serve up with the heaping of hummus like pictured. #mmmm
