Baked Sweet Potato Fries | #MKanCook


This year I am dedicated to fulfilling my new year resolutions. I didn't share them on this blog this year however one of them is to start living and choosing to eat healthier, for myself and my body to feel better and more energised. So in searching a whole load of amazing healthy food bloggers, instagram'ers and a plethora of healthy recipes I came across these delicious healthy + whole: Sweet potato fries.  I love a good sweet potato recipe as much as the next person and one as simple as this is surely to be made repeatedly, 'over and over again' in my household. With only a couple ingredients and steps this makes for an easy side dish or snack, amazing for parties, gatherings or just when a couple of your girlfriends make it over for a casual lunch. The convenience along with these being an amazing way to start following through with your healthy eating resolutions are only two reasons why they are so good. C'mon who can resist something as delicious and vibrant as these, healthy foods that pack a punch and are as satisfying as ever.

Just a word: Due to the moisture levels in sweet potato its extremely difficult to make them crispy like the average potato fries, so keep that in mind when making your fry expectations :)

Ingredients:
- 1 Large sweet potato 
- 2 tablespoons olive oil
- 1 teaspoon salt (peri peri salt optional)
- 1/4 teaspoon pepper
- 1/4 teaspoon chilli flakes (optional) 

Directions:
1. Preheat oven to 180 degrees celsius
2. Wash sweet potato thoroughly, leaving the skin on chop off potato ends and slice in half. Chop potato lengthways multiple times to create several long strips, then set on side and repeat until cut into approx 1/2 cm thick and equal fries. Repeat until all potato is cut.
3. Place sweet potato into a bowl and combine with olive oil, salt, pepper, and chilli flakes. Thoroughly mix until evenly distributed.
4. Place fries onto trays lined with parchment/baking paper. Spread evenly apart on the tray, ensuring each individual fry does not touch (keep as far apart as possible).
5. Bake for 15 minutes then flip, then cook fries for another 15 minutes. Timing may depend on your oven and the thickness of the potato so just keep your eye on them ;)
6. Cool for a couple minutes then dish immediately, they serve better warm. Enjoy!
